Haaa Mikala…Im post op gastric bypass…that was me months ago
I’m not sure what the issue is in doing these kinds of models in ZBrush. But in an effort to help, ZSpheres… Each part is a separate group and/or layer, not that hard. Using the deformation tools to chop a side away or compress in, merge geometry, all the tools are here. Yes you can do it in Maya and several other apps, but why? I did something similar awhile back for a dental surgeon that I can’t post yet, but it’s not that involved. Actually pretty quick if you get into the flow. 
Feel free to ask specific questions.
I agree, id rather avoid as much time out of a sculpting program as possible.
I hate poly modelling, if you can get zbrush to do it you should use it.

im a non maya chap at the mo too, hey weve done well to close the bag of clay up and switch off the kenwood !! 
if i was making that half shell thingy id model it solid , like a vac form posotive, then mask and extract a hollow one . look forward to seeing how they turn out!
