Will this set up run ZBrush?
I want something that will manhandle it, and have heard yes and no from tech savvy people that it will. I really want a laptop so that I could work wherever I choose if possible, but am willing to go with a desktop if that is the better option.

it will handle it just fine. Granted a tower with more than 4gb of RAM would do better. But that system should get you around 9-12million polygons per tool.
Are Macs generally better for this stuff? Or am I on the right track with the PCs?

mac and pc will do the exact same thing.
