Using the curve tools (selection, masking etc) to get round corners

I don’t know if I’m missing something, but I find it almost impossible to get a nich curve when using slice curve, or select by curve etc. All I want to be able to do is control the curve so that it looks like the attached (for example), but I find it almost impossible.

Can someone shed any light on how your supposed to do it, without lumps or bumps or the curve going off in various directions?

So does no one know the answer to this? How do I get some help on how to create curves like this? Anyone?
