Unfreeze subdivsion level PROBLEM - Help needed

I have posted this in the trouble shooting and had no response. I am experimenting around with Dynamesh.

I create a crude head in the picture below with freeze subD levels on in Dynamesh:-

Then I turn off freeze subD levels and I get a strange projection result. It is the same weather I turn Dynamesh or leave it on. I have had this with all my other attempts to use Dynamesh. The mesh had 2 sub divisions before I turned on freeze subdivision levels on.

I can’t find anyone else with this issue. Please help I want to use Dynamesh like I see everyone else in those amazing videos.

Any hep would be so appreciated. Pulling my hair out.

Thanks
