All of a sudden I get one undo.

Most common reason: A large file or dense mesh you are attempting to work with has caused ZBrush to exceed the limits set in Preferences> Undo History, and it has purged undo history to free up room. Either change the settings in that menu, or reduce the size of your mesh/file.
Other issues are possible. If this is something that happens with any file you attempt to work with and not just a specific file, there may be a general issue on your system. You might also want to try CompactNow. I placed a button on my UI ( /preferences/mem/CompactNow ) that solves the undo-history issue for a while.
My m1 Mac has very little memory and often get warnings about losing undo history. Especially when using sculptris pro. CompactNow seems to reset it or something.
Thanks I will check it out. I was baffled at first because the mesh I am working is pretty small but I forgot I have a skeleton and a ecroche model in the scene for reference.
