When I try a turntable in Zbrush the final video sometime is bumpy meaning the model jumps a few pixels up or down every now and then. Sometimes it happens sometimes not.
I’m using mostly default settings.
Anyone else run into this?

are you hitting the turntable button more than once? if you don’t delete, or save after creating a turntable, then you create a new one on top of the old one. Possibly you moved the object a bit during this…if not, I have no idea as I have never seen this problem either.
I’ve just been hitting the button once.

Also I wish you could to a turntable, but with rendered images instead of just a screencap.
Try recording a turntable with Perspective off. If you get a good result then the ‘bumpiness’ is a result of perspective distortion. When the pivot point is off-center there can be some distortion caused by perspective. Centering the pivot point may solve the issue but models that have long limbs or tails may still cause problem. Another solution is to append a circular ‘base’ as a subtool, centering this on the pivot point/axis of rotation. Enlarge the base until it extends beyond the limits of the model. The turntable should then render OK. You can make the base invisible by flipping the normals (Tool>Display properties>Flip) but don’t switch off in the subtool list.
