Lets say I have my object the way I want it, I have adjusted my curves and my divisions and I have a cool cylinder or pillar ready to get sculpted. How do I cap/fill the holes at the top and bottom? I look but didnt see an option.

You need to define the curve so that it starts and/or finishes on the left hand side. Basically you are lathing an object around the left hand vertical axis, so to avoid a hole you must start at the axis.

I understand this but if I am making a pillar how am supposed to keep a rigid look doing that? If I keep the starting positions at the extreme left it does not work.
Take a look at this example. The lines between points can be changed from straight to curved by dragging points off the edge of the graph and back on.

Now when I go to create a unified skin I get a very doughy result. Is this the correct way to go about this?

A unified skin won’t give good results for a shape like this, so don’t use unified skin. Simply press Tool>Make PolyMesh3D to be able to sculpt and subdivide the mesh.
Also I would not add any thickness in the Initialize settings - leave the setting at 0. For a closed mesh you don’t get any advantage. Thickness is useful when you are making something open like a vase. Otherwise you are simply doubling the polygons of your column by creating a second skin inside the first.
If you are using thickness to change the proportions do this after making it a polymesh - adjust the shape by using the Tool>Deformation>Size slider. Switching off Z (click on the little ‘Z’) and setting the slider to 20 will give about the same proportions.
