I got a character where the body and legs are one mesh/sub tool.
Is there any way to separate these two so they are two individual sub tools?
My “goal” is to get different materials on the body and a different one for the legs.

There are a couple ways to do this. What I usually do is Clone the subtool>Hide the body on one>Geometry>Delete Hidden. Then hide/delete the opposite part on the cloned subtool.
I am not sure at what stage you are in sculpting but you could also use the slice brush with Dyanmesh. It works really well if you need separate parts without a hole in the mesh.
