After I have retopologized a mesh made out of Zspheres, and change the UV layout in another aplication, ho do I applay-project all the details on it from the previous high poly mesh?

Import the new version as a new model and then append it to your high-res model as a new SubTool. Divide it to have as many polygons as the original. Then use Tool>SubTool>Project All to copy the details.
