Recreating models to lower poly count

Hello everyone, small question.

Say I finish sculpting my model and I would like to recreate it with lower polygon count on the body and higher on the head/fingers/hair. What would be the best method of doing this ? Anyone perhaps have a tutorial of such a process ?
