Question about easily creating geometry (scifi plates for a head)

Trying to get back into Zbrush I’m wondering what the easiest or fastest method would be to create metal plates following the shape of the head (on top and the sides). I know there are a lot of tools and tricks I’m unaware of so I’d love to hear some methods.

The other thing also regarding tools is the curve mode. On the product page about it here (under curve mode) http://pixologic.com/zbrush/features/zbrush4r2/sculpting/ has this short video about dragging a ventilation grid type of thing out on top of the head of that skull alien monster. How is that done?
