NOOB Questions

Hello everyone!

So I’ve been watching many tutorials, and playing around in Zbrush. I was working through making this guy : (http://www.pixologic.com/docs/index.php/Your_first_creature_creation) and I’m just wondering what I might be doing wrong. I’m getting a similar result, but my poly count is reaching 400,000 very quickly without that much detail, but when working on parts such as his “ears” it’s getting very difficult to detail anything without that many subdivisions. I’m just wondering if there is a way to only subdivide a certain section that requires more attention to detail. I’m looking at people’s models in the gallery and I’m wondering how they can reach that level of detail and smoothness without reaching an insanely high number of polygons. Or is there a way to simplify the model after sculpting?

Also, I was playing around making a hydralisk head from Starcraft (http://fc00.deviantart.net/fs71/i/2010/163/e/4/Zerg_Hydralisk_by_TouRniqueT86.jpg) and I built the base out of zspheres and then started detailing/roughing out the shape on top of that. I didn’t initially put on extra parts for the "jaw"but now I’m wondering how I can add on to that besides just pulling/adding brushstrokes to it. The polygons on that point seem to be getting stretched further and further creating some bad geometry, but it would take quite a few subdivisions to get the shape I want. And I feel just relying on subdividing to make things work isn’t the best way to learn, especially when I start working on very complex models.
