Mesh gets messed up in dynamesh, becomes single-sided (solved)

How do you deal with this problem where the mesh can get so thin on one side, that when you try to add onto it with claytubes or the like, it ‘subtracts’ from the other side. It’s as if it becomes a single layer of polys rather than 2 as it should be.

Currently I fix it by appending a tool cylinder or sphere then re-dynamesh, but that’s time consuming.
