Material overwrite?

Hi
I have finished my model know and want to render the object with different materials. Btw: is there a tutorial or do you know a thread, where the different rendermats are explained? What to use for what and so on?

Is it possible to overwrite all the different subtools with a material in one klick? Or do I have to select each subtool and overwrite each?

I hope to end up with different renderings for different passes, like spec, color, zdepth… Btw2: how to render a depth pass?
