issue sculpting deformed polyplane w/'quick 3d edit' feature disabled

I’m working through the tuts in the Zbrush2 Practical Guide downloaded here:

I’m using Zbrush3.1 and have come across an issue with the ‘Bamboo Project’ I can’t figure out…
Following along, I’ve deformed a polyPlane via an alpha stencil using ‘offset’ and ‘inflate’ deformations, with the ‘Quick 3D Edit’ setting disabled to achieve organic form rather than faceted.
When I try to hand-sculpt more variations as instructed, I am prompted to convert to editable 3dPolyMesh, and when I do I lose the organic form achieved by disabling ‘Quick 3D Edit’ and it goes back to being faceted.

What am I missing here?

After converting to a polymesh, set Tool>Display Properties>DSmooth to the max value. You may need to turn Quick off again as well – I’m not sure off hand if the setting will carry over to the new polymesh or not.
