For the first thing that you’re doing, you could use a technique called texture-based masking. Basically, any time you have a texture applied to a model you can use the Tool>Masking menu to mask the model based on the texture. There are several options such as masking by hue and masking by intensity. Once masked, you can sculpt or apply deformations that will then be restricted by the masking. It’s a great way to start building out details that are true to the applied texture. Your model will need at least as many polys as the texture has pixels in order to get the best results.

For the second thing, you will find it difficult to create those sorts of objects in ZBrush. But once you do have them as an OBJ (from any source) you can bring them into ZBrush and detail them to your heart’s content.
