I can get it to create the panorama fine, but when I run Best Render, it drops the environment and only renders the model. I’m sure I’m doing something wrong, I just don’t know what.

You need to use the BPR (Best Preview Render) for rendering environment backgrounds. If you want to use Best Render for some material effects then do the Best Render first then follow it immediately with a BPR (the background will be restored).
