How to change the zsphere for sphere to cylinder.

I have noticed some of the lightBox maquettes use cylindrical shapes to represent limbs.
When I draw my maquetts with Zspheres the limbs are made of lots of shperes. How can I change my Zsphere shapes from spheres to cylinders? so that one cylinder will represent a forearm or UpperLeg, as I have seen in the LightBox maquettes.

I have another question about symmetry:

Once I have posed my mannequin in a asymmetrical way. Then I make an adaptive skin out of it and start sculpting that form.
Is it possible to keep sculpting with symmetry ? For example; To paint one cheek bone and expect to see the other side also being formed.
I am not able to do that and was wondering if it can be done ? or am I asking too much from Zbrush ?
