The process for exporting a normal map is explained in this video. A World Space Normal map is generated when “Tangent” is disabled in the Normal map menu.
Otherwise the process for generating and exporting textures in ZBrush is largely the same. It is a matter of converting whatever data you wish to export into color data applied as polypaint, generating a texture from that polypaint, and exporting that texture. Multi Map Exporter automates this process.
So in the case of a “Thickness” map, you would use the Polypaint> Polypaint by Thickness feature, convert that into a color texture and export it. Remember that if manually creating textures you must clone them from the Tool> Texture Map menu to the main Texture palette to export them.
There is no official “Position Map” map feature in ZBrush. If you are following some sort of resource that explains how to export color data adequate for your purposes here, it would be a matter of converting that color data into polypaint. Otherwise this isn’t possible.
