Nah, don’t feel dumb for asking questions, 3d is complex stuff
This place doesn’t get as much traffic as you think. Plus, a lot of the traffic is people posting art, or viewing art.
I’m on the mac, so I don’t have those glorious planar brushes just yet, but I bet that’s your ticket. Now I’m not sure about doing an exact cut to 75 degrees, as a lot of ZBrush is more free style than mathematical. That’s why I love it though.

If you’re wanting a clean looking cut, you will need more geometry. Subdivide it more in the tool>geometry menu. Another option would be to use masking, as you have in your image (but on a higher sub division level so it’s not blurry), and use the flatten brush. The planar brushes gotta be your answer though!
