Hello,
the TrimCurve brush does not seem to be affected by normal brush symmetry (the X button). Trimm one side of the model does not cut the other side.
Is there a way of having symmetry on that brush?

Nope… you can’t have symmetry with trim brush.
The solution is to do a mirror and weld action. But be careful the mirror and weld action only work from one side. So if you do your trim in the wrong side you will be force to do a mirror action (deformation in tool menu) before applying the mirror and weld.
