Help Re-topology and project

Hi can anyone suggest how I can re-toplogize inside the horses mouth so I can re project the details on a new mesh, I have tried adjusting the sliders in Projection but cannot get it any better than this. Is there a way of hiding part of the sculpt and then bring it back after re-topolgizing the interior.

Rather than projecting during retopology, create your skin and append that to your original model. You can now mask off the problem area for one projection, then invert the mask and adjust the settings for a second projection.
