After I remesh my model and then project all everything is good except the hands? I admit I have never played around with the remesh and project all features some I may be making a lot of mistakes here

remesh density isn’t high enough, and project all usually requires clean up around fingers, etc.
I’m sorry, could you please explain a little more?
From the looks of it the density of your remesh (slider next to the button) isn’t high enough to support the creation of fingers. You probably have mitts. Try upping that slider until you can get fingers on your mesh.
There is also a project all slider that indicates the distance that the mesh will travel, if you lower this distance you should be able to get a good projection around the fingers.
