Is there a way to turn off the “feature” where you zoom all the way out to frame all your subtools/entire model when you alt+double-click? It’s reeeally bothering me.

Try settiing Preferences>Edit>Enable Auto Center to zero. Store the config (Shift+Ctrl+i).
