Hey there,
i don’t think there is a specific tutorial about wings (at least i have never seen one) but here is what you can try: after drawing out your Zsperes, go to the adaptive Skin Tab and change the mode to “Use classical skinning” After that just play around with the Ires and MBR sliders. Also try out the MC and MP button. These controls will change the look of the resulting mesh drastically. I have done some wings in ZB this way.
Another way could be to use a Polyplane and draw a wing shaped Mask on top of that and use the extract button to make a sculptable 3D mesh out of that.
And last but not least, you could use the retopology features to do the exact same thing. Bring in a reference image, convert it to an alpha, do a mask from alpha, enter retopo mode and then just follow the outline to create your base mesh … actually i can think of many more ways to do this …
