Creating modular game characters

At the moment, I’m developing a 3d game in my free time, partially for my portfolio, which might come in handy in job interviews.
The thing, which I am thinking about at the moment is how to create the game characters modular, so that I won’t have to do redundant work…

So, my thought at the moment is to create 2 or 3 different bodies (athletic, thin, fat or something) and leave the head out. Then, every character has to get his own head… then there will probably be one bone skeletton for all the animations. But what would be the next step? Shall I create a unique character from each head welded to the specific body and let maya compute the animations from the skeleton? Or shall I let the game engine put the heads and bodies together for saving redundant work? I actually don’t really know, what’s possible, but I can imagine that it’s gonna be a lot of repetitive work, if I have to weld the head and the torso for every new game character…

What do you think/know? Are there good and better ways to achieve what I intend to?
