In other words: Turn it to a view which covers the area i want to model on,
then lock the position, so that the model does not turn, even if i click
on the canvas (which happens quite often to me).

No, there isn’t a way to do that. But in the Transform palette there are settings to restrict the axis/axes in which the model can be deformed. By default, x y and z are all active. But you can for example set things to only allow edits in the model’s x and y directions. (Or any other combination.) With that active, it doesn’t matter what direction the model gets rotated in, it can’t be edited except in the direction(s) that you want.
one other trick which may help, is to make a polyplane and append it as a subtool, enlarge it to where it fills the whole canvas, it also must penetrate your model, if you try this with a plane and a sphere you will see that you cannot rotate unless you go outside your canvas but you can sculpt off the egde of your model and it won’t rotate.
EDIT: it doesn’t need to fill your whole canvas, just enough of the space around your model.
There’s a simpler way:

Before drawing your model on the canvas, choose a good background color (such as dark gray for the standard interface color) and fill the background with it by pressing Color>FillLayer (Ctrl+ F).

Switch the color back to white, select your model and draw it on the canvas.

Switch on Edit and sculpt. You can reposition the model in the usual way by clicking outside the canvas border, or using the buttons.
