I have a nice blue color for my background that I would like to save and be able to reproduce. How do I identify the numeric RGB values?

Move the Document palette into one of the side trays so that it stays open. Then click on the color selector in the shelf and drag off of it. The cursor becomes a picker. Release the mouse while the picker is over the color patch in the Document palette. That sets the color in the Color palette to match the color of the document background. Now when you look at the Color palette, you should see the RGB values in the three sliders.
