Beginner here: With Edit off I have more strokes available than when I have Edit on. Can someone please explain the difference in the available strokes with Edit on/off?

With Edit on, you are working in 3D Edit Mode. With Edit off, you are working in Paint Mode which will give you a different set of tools to work with.
