Well I’m far from a Rigging Guru but I do have an opinion or 2 ;D
You could go either way some people like to pose after sculpting which will allow you to remain in symmetry for a much longer period which will equal less sculpting.
I know of at least 2 methods to pose after sculpting.
1> Using Transpose Master to temporarily combine your models separate SubTools along with the Topological capabilities of the Transpose Tool as well.
2> Others like to use ZSperes to create a rig to their model. I like this method but it took me quite a few times to get a successful pose. Here is a Tutorial by Paul Gaboury: https://www.youtube.com/watch?v=cmury2eT_io
Both methods won’t magically move everything (like clothes) exactly in place so you’ll always be adjusting/resculpting some areas.
Hope this is helpful.
I like what I can see of your horse so far.
Good luck and happy sculpting!
Mayh the Forms be with You!
