Turn on colorize mesh (it’s in the “Polypaint” Submenu of the Tool Menu in ZB 3.12) You can then paint mateial with your brush assuming your brush is in M or MRGB mode. (By default near the top of the screen.)
Polygroups can be created inside ZB3 (Polygroups submenu) but I think to do custom UV groups, you need to export your level 1, UV it in something else, and reimport your level 1.
