I am new to Zbrush and was wondering if there was any tutorials out there on doing a wolf head or simular with or without body.

I wouold look at some reference images , then take sphere adn enter dynamesh mdoe and do waht you see on ref pictures 
Look for proportions and main features adn when they are done go for details but main features first. Soemtimes it is hard to see the details because of the fur. Try to find some anatomical references they are usually withour fur.
