So after merging 2 subtools > Dynamesh, my symmetry is off, is there anyway I can re-align symmetry to properly be symmetrical in both sides?

Assuming the mesh is perfectly symmetrical in itself, you can recenter it by using Tool > Deformation> Unify.
If the mesh is not symmetrical in itself, to make your mesh symmetrical again, you would have to reposition it at the center of the plane you want it to be symmetrical along, and use Tool> Geometry> Modify Topology> Mirror and Weld.
It may help to switch on the floorplane to visualize the axes. Make sure the elevation slider in the Draw Palette is set to zero.
