Its really up to you. My preferred method is to dynamesh until im relatively happy with the level of detail before I duplicate, zremesh and project.

In case your unfamiliar with this method, you:

1 Turn off visibility on all other subtools except the one you want to zremesh.
2. Duplicate that subtool.
3. Zremesh the duplicate. This will become your lowest subdivision level so dont worry about the details right now on the zremesh, just look at the topology itself and decide if its clean and makes sense. (legs for example) This will help later when posing.
4. Once your happy with the zremesh divide it 2x. Then click “Project” I think its under the subtool menu.
5. Subdivide a few more times and project again.
6. Repeat until you have the highest level of subdivision that you want.

Pro tip: If you know that you will want more detail in the face and feet (for example) and you want those areas to have more topology than the rest, then you need to mask those areas and invert the mask for the first subdivide. This will only subdivide those areas and not add a new subdivision level. (This step will go in between 3 and 4 above)

Hope Ive helped!
