The first or base zsphere is really a half sphere. Just add another sphere to the opposite side your other spheres are and it will close it up.
So, OK. Now, How to get all these colors on each ZSphere like that ?

I really think you should explore the built in tutorials. Under Help. All your current and most of your upcoming ones are right inf front of you.
In edit mode make sure that the quick and frame buttons are on. when you create your zspheres and click “a” to preview you will see the different colors.
And like Jason said, check out the Practical guide and the zscripts included in the help menu of Zbrush. Most of the questions you haven’t even thought of yet will be answered by them and you won’t have to wait for answers!
