Is there a way of extruding a form In Zbrush using a greyscale image?

Hello Stephen.

There are several ways to do this.

1. Use the Alpha > Make 3d function.

2. Use the Spotlight Snapshot 3d function.

3. In the case of a vector file, use the Text 3d and Vector Shapes plugin.
