Are you referring to the way that when you have Symmetry enabled and are working with a curve stroke very close the Symmetry center line, the curve stroke on either side wants to jump to that center symmetry line?
There is a Curve Snap distance control on Stroke> Curve functions but that does not apply here. This is a result of symmetry mode and overlapping brush cursors on either side of the center line.
You can:

Reduce your draw size so the brush cursors do not overlap. Draw the curve out at a much smaller size. This will diminish the effect of the center snapping. Then when you have the curve drawn out the way you want, adjust the Draw Size back up to the desired size, and click on the curve to update it. The stroke geometry will update itself to the desired size without the snapping issue.

Disable symmetry and mirror the geometry from side to side as you suggested. This is not to be feared. If you don’t do this with a mesh periodically symmetry errors may be introduced.
