How to solve this. When I delete a polygroup/delete hidden/fill holes, the filling is made by a curved mesh.
I want to have instead a plane mesh and not curved mesh. any idea ?

Is that possible to post a screen shot with the issue you are facing, I am not sure if I understand what you want to do without a screen shot.

“Close Holes” can only produce a planar fill if the hole you are trying to close is planar. If you try to fill a hole with it where the edges of the hole are non-planar, for instance in a corner or along a curve, the function will produce a curved fill. It can only close a volume–it doesn’t understand following the curvature of a surface or angle changes.
In some situations you may instead wish to use Live Boolean to make a more precise cut with a subtractive mesh. If you want to make a quick planar cut, the Trim brushes may also be useful for this, but keep in mind they use the close holes functionality, so a non-planar cut may produce the same issue.

Indeed boolean is only way that I can use for simple tools. For complex ones boolean is too tricky.
