I’m trying to delete half of my sculpt, using "delete by symmetry, but instead it’s deleting 3/4. I can’t find any information regarding setting the axis('s).

Your mesh may not be symmetrical in the worldspace, or the topology may not be able to be cleanly divided in half. Without any other information provided, I have no idea why the operation is failing. But you can always simply hide the half of the model you want to delete, and then use Tool > Geometry > Modify Topology> Delete Hidden.

You might have inadvertently moved the mesh off center. To re-center it, go to “Tool > Deformation” and click “Unify”.
