How do I show wireframe on an isolated subtool??

I’m making a turntable for a guy with a hat on, but I only want to show the wireframe of his face, not the hat. How do I make so the matcap stays on the hat, but his face gets an incandescent white color, which will display my wireframe more clearly?

You can fill the different parts of the model with different materials. This tutorial explains: http://pixologic.com/docs/index.php/Materials_and_SubTools

The SubTool Master plugin would make things really easy.
