Masking sharpness is limited by mesh resolution. If a mesh has enough polygons, usually a mask can be crisp enough that the uneven edges are undetectable by the naked eye.
If you’d like to cut a perfectly straight line independent of mesh density, use the SliceCurve selection brush instead to slice it into separate polygroups . This will actually slice the geometry along a perfectly straight line, leaving you with two separate polygroups that can be masked individually.
