Hi Joaquim. Have you tried the Pixologic Classroom? There are a ton of tutorials there on various Zbrush features.
There’s no one right way to create a character within zbrush. It gives you the tools to try many different approaches. You should be able to find some videos on You Tube of people creating characters in different ways, with different goals in mind (animation, game, 3d printing, illustration, etc).
Like Scott suggests, you can try the Pixologic classroom. Also there are tons of ZBrush character creation videos on Youtube, all free to view.
