As you can see when creating a curve with the curves helper plugin it creates this strange twisting effect, is there a way to prevent it? Thank you!

One possible explanation here is that your ZSpheres are twisted along their chain. Remember that ZSpheres have a rotational element too. It is possible for a ZSphere to be rotated in such a manner that it produces twisted geometry in a resulting mesh.
However, this is somewhat difficult to do deliberately. I’ve not yet been able to deliberately produce the effect on display here by simply twisting the ZSpheres.
It would be much easier to accidentally produce this effect by using the Ctrl-twist functionality of Curve Edit mode.
The geometry from a curve stroke can be twisted around a curve by holding down Ctrl after beginning a curve adjustment while the cursor is in curve edit mode (the cursor changes to cyan color while over a live curve). If you hold down Ctrl after beginning an edit, you can twist the geometry around the curve and produce the kind of effect in the screenshot almost instantly.
