does anyone know a good tutorial about how to create cloth? for example a shirt with a folded collar? Or a skirt with so many wrinkles?

You can do this with ZBrush’s retopology features. After laying down ZSpheres you can use Edit>Move to adjust their positions. For example, you can create an edge loop for the bottom of the skirt and then move those ZSpheres out away from the body to create the flare of the skirt.
After you have the geometry that you need, it’s pretty simple to sculpt that new model to give the finished look that you want.
