Not too saturated if you consider how the original photo was taken. Lots of lights, diffuse etc.

To Gordon Robb: Thanks. Actually, the model is the easiest part of this work. I spend about 10% time modeling, 20% time texturing, 70% time rendering.
To Cordycep: Thank you. All the hair is done by shave and haircut and redered in mental ray.
