Looks like your getting better… You should keep working on the old guys face.
Once you get the basic overall profile of the face with your geometry between 1-3 start going up one step higher adding in a little more form as you go… Once your happy with the form of the head, start adding some smaller details - using your alphas. Are you going to poly paint it?

For skin texture you should take a look at Gnomon’s DVD http://thegnomonworkshop.com/dvds/scu03.html
It is for traditional sculpting but it can be applied in Zbrush and it is THE BEST tutorial I’ve ever seen in sculpting skin from scratch. Is money well invested

Woah geez that’s huge.
At least we get to see the detail right? Heh. But while there’s a lot of fine detail, it’s not quite right. The folds in it dont seem to match up to the creases and folds in the flow of the face.

the chest and upper back area look good. i would work on the legs. the calfs look too big and the quads look a bit too long. you should grab a good anatomy book like sarah simblets anatomy for the artist. theres some good refrence there that i think will help you a lot.
