Under tools, inventory. All the controls are there.

Have you run the ZScripts on ZSpheres that come with ZBrush 1.51? They are in your ZScripts\Tutorials\ZSphere_Tutorial folder, or can be accessed from the default script.

The tutorials explain all of the different skinning options for you.
