I've been looking at some benchmarks for the last few days, and my tentative conclusion is that the high-end dual Xeon systems and the high-end dual Opteron systems are very close in terms of performance, and fairly comparable in price -- though Opteron systems usually tend to be cheaper. Xeon systems are faster at some things and Opteron systems are faster at some things.
Meanwhile, Opteron sets you up for 64-bit performance for the near future, and the 64-bit version of Windows should be out by next year (and presumably, at that point, ZBrush will allow more than 4GB RAM since that is a limit imposed by the 32-bit processors).
So, when the time comes to buy a new system, until someone smarter comes along, I'm planning on going with Opteron.
