Hi folks!
Just like you I was amazed by the modelling video that Pixolator released(in CGTalk this one sold some copies of ZBrush2 ;) )but I have some questions to make, so here they go:
1- How do you "project" the eye ball into the eye socket while modelling the zsphere as Pix did?
2- How can you model only in some selected polys and make the rest of the mesh "desapear" while modelling that part?

To project the eye ball in the eye socket I think you use projection master. Drop the model, place a sphere in the socket and then pick up the model. But I could not make it work myself. Some help here would be nice.
About your second question. To hide selected portions of your model press Shift+Ctrl and drag the mouse. Another way is to click a polygroup while pressing Shift+ctrl. Check the help there are a couple of really good tutorials about this

I have not seen the movie yet, but projection master will apply an eye sphere (or any drawn shape for that matter) with deformation button turned on. Make sure the original model mesh is facing you squarely, projection master does not like it when objects are drawn "outside" the original model's boundries.
I'm new to zbrush but really like what the program is capable. i've watched the video and was wondering if someone could explain a little more in depth exactly how pixolator made those teeth. i have tried but just can't seem to grasp the concept.

Press T for the Edit mode!
Zbrush can make that from the beginning :)
